Very good atmosphere during our tasting day in Nantes this weekend. Numerous exchanges on the evolution of the range and biodynamics.
This Tuesday, the estate welcomed the students of the BP sommellerie section of Béziers. Just before they went to visit Nicolas Joly's domaine (Coulée de Serrant de Savennières) to finish their day at the Domaine des Roches Neuves at Thierry Germain's (Champigny). Thanks to Ludovic Bigel, their teacher, for electing us. Thanks also to the students for their technical comments on our wines which will allow us to improve.

This weekend, it's the autumn open days ! Many passionate exchanges.... ....over a drink of course, but also to taste local culinary specialities... ...not to mention the exhibition of magnificent photos by Joël Soleau (www.joelsoleauphoto.com), under the gypsy jazz tunes of the Magic Swing duo !
On November 7th, monthly tasting committee. After having validated the final blend of the "Large Soif" red 2019, we tasted a panel of dry white maceration wines. Confirmation: our 2019 vintage holds up well ! We extended the session with an excellent gewurztraminer on volcanic rock from the Verdier-Logel cellar (Forez).
On November 4th, the domaine presented its wines at the "Levée de la Loire" organic wine fair in Paris. It was a show reserved for professionals (wine merchants and sommeliers). A club of Jura colleagues was present in the same area. We took the opportunity to share our techniques and of course to taste. A favourite for the wines of Raphaël Monnier and Alice Bouvot.
And it is Laurent who opens the ball with the "Wines & Terroirs" exhibition in Toulouse, which took place from 1st to 3rd November 2019 !
Prepared horn dung (500 P) is horn dung (500) into which the six preparations usually intended for compost have been added by a particular process. The prepared horn dung (500P) must be stirred for one hour, in the same way as the traditional horn dung.
The fermentation of the chenin du Pavillon must begins! The gobbling of the hydraulic plug of the amphoras is the first to start.... ...so many emotions!
